Bacon Apple Chutney
Ingredients:
- 6 slices bacon, finely diced
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 1 USA Granny Smith Apple, peeled and diced
- 2 tbsp (30ml) apple cider vinegar
- 1 tbsp (15ml) packed dark brown sugar
- 2 tsp (10ml) molasses
- 1 tsp (5ml) grainy Dijon mustard
- 1/4 tsp (1ml) Kosher salt
Directions:
- Cook bacon in a small saucepan over medium heat until crisp.
- Drain fat from pan leaving 1 tablespoon (15ml).
- Add onion, garlic, apple, vinegar, sugar, molasses, mustard and salt.
- Cook 3-5 minutes, stirring frequently, until apples have softened.
- Cover and let simmer about 5 minutes or until apples are translucent.
- Serve warm as a condiment or as part of a cheese or charcuterie board.
