Baked Apple and Smoked Gouda Pancake

These pancakes will become an all-time favourite! They’re easy to make (you can use pre-made pancake mix) and provide a perfect balance of sweet and savoury.

Ingredients:

  • 2 USA Granny Smith Apples, thinly sliced
  • 2 tbsp (30ml) lemon juice
  • 2 tbsp (30ml) maple syrup
  • 2 tbsp (30ml) water
  • 1 tbsp (15ml) cornstarch
  • 2 tbsp (30ml) butter
  • 1-1/2 cups (375ml) pancake mix
  • 1/2 cup (125ml) vanilla yogurt
  • 1/2 cup (125ml) apple cider
  • 1/2 cup (125ml) diced smoked Gouda cheese

Maple Cardamom Cream:

  • 1 cup (250ml) whipping cream
  • 2 tbsp (30ml) maple syrup
  • 1/4 tsp (1ml) cardamom

Directions:

  1. Preheat oven to 400°F (200°C)
  2. Place apple slices, lemon juice, maple syrup, water and cornstarch in a large 10 or 11-inch cast iron skillet; combine well and add butter. Cook over medium heat until apples have softened; about 4-5 minutes, remove from heat. Place 2/3 of apples onto a plate to cool and arrange remaining 1/3 in a single layer in the skillet.
  3. In a medium bowl, stir together pancake mix, yogurt and apple cider. Pour mixture over apples in the skillet, spreading to make an even layer. Sprinkle with diced Gouda and top with remaining 2/3 of apple slices.
  4. Bake for 15 minutes or until light golden and puffed. Let rest 5 minutes and slice to serve.
  5. To make maple cardamom cream, whip cream with maple and cardamom into stiff peaks. Spoon over warm pancake slices.
