Mini Chai Apple Fritters

Enjoy bite-sized desserts infused with warm chai flavour. Boosted with vanilla Greek yogurt for protein, these fritters are a blend of taste and health.

Ingredients:

Chai apple fritters:

  • 2 USA Granny Smith Apples, peeled and diced
  • 1/2 cup (125ml) steeped black tea, cooled
  • 1 tbsp (15ml) apple pie spice
  • 1 tbsp (15ml) cornstarch
  • 1 tsp (5ml) ground cardamom
  • 1/2 tsp (2ml) ground coriander
  • 1/2 tsp (2ml) ground ginger
  • 1 cup (250ml) all purpose flour
  • 1/4 cup (60ml) yellow corn flour (finely ground dried corn kernels)
  • 2 tsp (10ml) baking powder
  • 1/4 tsp (1ml) Kosher salt
    2/3 cup (225ml) 2% Greek vanilla yogurt
    Vegetable oil for frying

Chai glaze:

  • 2 cups (500ml) icing sugar
  • 1/4 cup (60ml) steeped black tea, cooled
  • 1 tsp (5ml) apple pie spice
  • 1 tsp (5ml) ground cardamom

Directions:

  1. To make chai apple fritters: In large non-stick skillet, place apples, tea, apple pie spice, cornstarch, cardamom, coriander and ginger, stirring to combine. Bring mixture to a simmer over medium heat, stirring frequently, until apples have softened and liquid has thickened; about 8 minutes. Transfer mixture onto a plate to cool.
  2. In a large deep pot, heat 2 inches (5 cm) of oil to between 365°F and 380°F.
  3. In a large bowl, whisk all purpose flour with corn flour, baking powder and salt. Stir in yogurt until partially combined and then stir in cooled apple mixture until just combined.
  4. Drop dollops of batter, 2 tablespoon (30ml) each, into hot oil, frying 5-6 at a time, until fritters are golden brown. Set cooked fritters on a cooling rack to drain and cool.
  5. To make chai glaze: In a medium bowl, whisk icing sugar with tea, apple pie spice and cardamom. Lightly dip each fritter in glaze to coat and set on cooling rack.
